Banana, Peanut Butter & Superfood Sprinkles Pancakes

You know what makes me feel incredibly happy? Banana and peanut butter pancakes, on a rainy Saturday morning. This breakfast never fails to fill me with joy – you know the kind that makes your head feel a little dizzy, so you start hugging everybody in the apartment for no apparent reason, other than you’re just so damn excited to be eating something so delicious and so healthy? Ok, I may have burnt them a little, but who doesn’t love crispy edges?

You’ll need:
1 huge banana (save a few chunks for the topping)
2 egg whites (whip them up good)
A handful of oats (gluten free)
A small grated carrot (if you fancy turning your pancakes into carrot cake)
A handful of superfood sprinkles (to put into the mixture and for the topping. I use these from Holland & Barrett)
1 tbsp milled flax, sunflower, pumpkin, sesame seeds, and goji berry (I use Linwoods from Holland & Barrett)
1 tbsp peanut butter

I mash the huge banana up in a small bowl, until it’s all mushy, then I add the two egg whites, followed by the oats, a handful of superfood sprinkles, milled flax, sunflower, pumpkin, sesame seeds and goji berry, and the grated carrot. Then, I mix everything together, so the egg whites begin to froth up and all of the mixture has blended well. I stopped frying my breakfast pancakes a couple of months ago. I ended up using far too much coconut oil, and it started taking too long (I get very impatient when it comes to these pancakes!). What I do now is pour a little oil into two medium frying pans (rub it all in so that the pan is equally coated), then I use a small ladle to scoop out the mixture and pour it into the pan, so you’ll end up with 5/6 small mounds of pancake batter. I pop them into a pre-heated oven (the hottest temperature), and let them bake for around 4/5 minutes. When they come out (usually without the crispy bits. I was deep in conversation at the time and completely forgot), leave them for another minute to cool and then scoop them out, pile them up on a plate, smother them in peanut butter, place the bananas on top and finish with another sprinkle of superfood.

Devour them with a cup of freshly brewed coffee, and you’ll have a smile on your face all morning. Make another batch afterwards if you’re feeling greedy. It’s ok, they’re pretty damn good for you.
